Damn you, angel food cupcake recipe!  
I tried to make these raspberry swirl angel food cupcakes on sunday, but for some reason the cakes came out as gummy little inedible lumps. And since the recipe called for a vanilla bean, they were damn expensive gummy little inedible lumps.

So to use up the already made raspberry filling, I made up two dozen cupcake-sized raspberry swirl cheesecakes, which I have to say came out pretty darn tasty.

In other news, today's photograph is definitely in the running for favorite Wayback Wednesday ever.

Vanilla beans are stupidly expensive to buy locally. I buy mine from The Organic Vanilla Bean Company. Way better deal and I can eke more than 6 months out of them if I vacuum seal and freeze them. The last full pound I bought came out to 108 beans for $20.

Glad to help. I live with a vanilla snob and buying them online has helped our budget.
