Been doing a lot of cooking lately. Last week I made a big pot of butternut squash risotto that we ate as a main dish a couple times, as a side dish with fried chicken, and froze a bit (hopefully it will survive) to throw some seafood into at a later date to get another main dish out of it.

Last night I made a beef stew. Didn't get started on it til a little late, so we were only able to sample it a bit rather than make a full meal of it, but it seemed pretty good. Lots of red potato, onion, carrot, portabella mushrooms, celery, and garlic. And red wine. My only real qualm is that it deserved a slightly better cut of meat than I bought for it. Something I'll remedy the next time I make it.

It's not bad to use a cheap cut of meat in stew. Maybe I should make stew...

You're right. Upon eating a heaping bowl tonight, I realized the cheap beef was just fine.

Here's my beef stew recipe:

Beef Stew

2.5 lbs. beef (cut into 1" cubes)
3 Tbsp olive oil
2 medium onions (chopped)
6 medium garlic cloves (minced)
4 tb flour
1.5 cups red wine
3 cups chicken broth
3 bay leaves
1 tsp dried thyme
4 stalks of celery (chopped)
6 medium red potatoes (cubed)
5 large carrots (sliced)
1 cup frozen peas
1 cup parsley (minced)
12 oz. Portabella mushrooms (sliced)

-Preheat the oven to 300 degrees.
-Season beef with salt and pepper.
-Heat 2 tb oil in Dutch oven over medium high heat.
-Brown sides of beef cubes.
-Remove beef.
-Add additional 1 tb oil.
-Sautee onions and celery until soft
-Add garlic and sautee for another minute.
-Stir in the flour. Mix well.
-Add wine, stir well.
-Add the chicken stock slowly, stirring well.
-Add bay leaves and thyme and return to simmer.
-Add beef, mushrooms return to simmer, and place the pot in the oven.
-Cook for 30 minutes.
-Add potatoes and carrots cover and return to the oven to cook for 90 minutes.
-Remove from oven
-Add the peas and parsley, stir well.
-Discard bay leaves, adjust seasoning and serve.

And here's the Butternut squash recipe.

My MIL likes beef stew so we will try this recipe this winter (if she doesn't "escape" from us first, hah!)

And The Man likes vegetarian dishes, especially if they include butternut squash.

Sounds tasty. I made some vegetarian sloppy joes (I know, it sounds NASTY but it's actually pretty good) last night and I'm making some butternut squash curried soup with horseradish later in the week.

I just wish we had some chillier weather to put me in a "yea, the weather is cool enough to cook" kind of mood.

Yeah, it did feel odd cooking beef stew in summerlike weather, but the stomach wants what the stomach wants!

Butternut squash risotto is one of those must-haves for the season. That beef stew recipe sounds delish, too-- I'm thinking perhaps it would be a good crockpot recipe.
