When we picked up my aunt from the airport last week, she repaid us with a bag of fresh-off-the-tree macadamia nuts. Miles better than the ones from the grocery store. So K. and I decided that I should try and re-create one of our favorite dishes from Pod: Macadamia Chicken Stir Fry. It had scallions, red pepper, shitake mushrooms, brocolli, asparagus, carrots, and of course chicken and macadamia nuts. I tossed it in a sauce made of orange marmalade, honey, soy sauce, chili sauce, sesame oil, garlic and ginger. It wasn't an exact copy, but it was pretty damn close and possibly even better (better nuts, less expensive, and my sauce had a lot more flavor). I can't wait to go home tonight and have some leftovers.
