Been doing a lot of cooking lately. Last week I made a big pot of butternut squash risotto that we ate as a main dish a couple times, as a side dish with fried chicken, and froze a bit (hopefully it will survive) to throw some seafood into at a later date to get another main dish out of it.

Last night I made a beef stew. Didn't get started on it til a little late, so we were only able to sample it a bit rather than make a full meal of it, but it seemed pretty good. Lots of red potato, onion, carrot, portabella mushrooms, celery, and garlic. And red wine. My only real qualm is that it deserved a slightly better cut of meat than I bought for it. Something I'll remedy the next time I make it.
