Made some butternut squash soup for the girlfriend last night. Very yummy and really simple. You just simmer chunks of peeled squash in some chicken or veggie stock, puree it once it gets soft, then add some butter and cream. Spicing it is really easy. Just throw in salt, pepper, cayenne pepper, paprika, nutmeg, cinnamon, brown sugar, whatever you like. And just to give it that restaurant flair, I threw some chives on top.
