All right, the next time I decide to make a cookie recipe because it looks healthy, somebody please hit me upside the head. The peanut butter oatmeal cookies I made aren't terrible, but they're not at all the chewy deliciousness that I wanted. I'm sure there's a better, less healthy recipe out there if I ever get the notion to make these ones again.

ETA: K. just called to tell me that after eating five or six of them, she thinks they're actually pretty good. Kinda like granola bars.

One easy way to make any cookie (or any baked good, for that matter) recipe a bit healthier without sacrificing the chewy goodness is to substitute applesauce for half the oil. If anything, the end result is even moister.

(There's also some sort of rule of thumb about substituting coconut for something, but as I loathe coconut, I never paid attention to that one.)

No no, it's the ratio of corn syrup to solid stuff ratio.

The coconut doesn't bind the mix. it needs a binder


I recomend rice-flour and too much creamer.

It usually works.

Healthy cookies? Why, oh, why? If I'm craving peanut butter and oatmeal at once, I like the no-bake ones.

Last time I made no bakes I got all experimental and made the butterscotch and corn flake kind. I thought they tasted too much like corn flakes, but one of the ladies at school liked them...

The thing about making "healthy" foods is that you can't expect them to taste like their "unhealthy" counterparts. "Healthy" foods need to be judged on their own.
